Super Sweet Pineapple
Pineapples taste great cut up, in cakes, and in salads. This Pineapple Sunshine Salad is easy, forgiving (adjust it any way you like), and yummy!
Super Sweet Pineapple Sunshine Salad
Cut up one pineapple or use canned, drained pineapple chunks
Combine with grated carrots, one or two
Add 1–2 tangerines, sectioned (or a can of mandarin oranges), Sunflower Seeds or your favorite seeds or chopped nuts, and Goji Berries or Craisins
Add 1/2 C plain (or flavored) yogurt.
Let the flavors meld one hour in the fridge. It will juice itself.
